If there's such a thing as a "Mother Sauce" in Italian cooking, this would be one. Homemade Alfredo Sauce is simple, classic and, when properly prepared, a little bit of heaven. It also provides the basis for a myriad of sauce ingredient variations: possible additions include fresh green peas or asparagus tips, lemon zest, blanched bacon or proscuitto, shrimp or bite-sized pieces of smoked salmon. Pretty much anything other than beef or game can be added to this basic sauce.
